No Navy contract jeeps were painted grey from the factory. It was something done by the ship or unit. That being said it is up to you.
Most people paint the body grey (inside and out). The frame, body underside, and engine compartment would probably remain OD.
Check out this website, #10 is an original '43 GPW that came out of the Philadelphia Naval Yard. The body is grey inside and out but the wheels are OD along with the engine compartment and underside.

Our group is doing an M38A1 as a Navy jeep. Most research shows no real consensus on what was grey and what was left OD green, so we are doing our own thing, but here it is.
Frame, engine and all chassis parts like axles and springs are OD green.
We are painting the wheel hubs and forward frame horns Grey
Tub is grey inside and out
all sheet metal is grey, grill, genders, hood top and bottom, winshield, bows, mirror arms, pedals, gear shift canes, seats, etc.
Engine accessories are matte black like starter, generator, air cleaner
All markings will be in matte black on hood, front bumper and rear bumperettes.
Canvas is od green, seat cushions and top
wheels are grey
jerry can is grey, although this would have been left OD green, so we know this is not correct
Will try to post some pics when we get further along.

WWII Navy colors ranged from the typical ugly battleship gray to blue and beyond, my personal opinion is that the darker blue is more typical of what a Navy Jeep would have looked like, but then I'm no squid.

I hope I'm reading this wrong. I have seen an original Navy WWII jeep with the top of the hood grey and the under side of the hood OD green as only what was visable or reachable with spray gun was overpainted grey. But the entire tub would be grey except for the underneath. But the inside of the tub would be grey. Now, I don't know if the military would remove the canvas from the seats, paint the seats grey and then reinstall the old canvas, or just leave seats OD green. Remove tires and paint wheels grey? Mask off tires and paint wheels grey? Mask off outside of tire and paint only the outside of the wheel grey and leave the inside green? Where does it end?

I try to think about painting like USN sailor who have job to do - change color from OD to Navy gray,
outside gray, under hood OD, removed wheels and protected rubber, fenders inside gray, protected glass , inside - data plates, knobs and gauges protected, cushions of seats removed and screwed again when paint dry.

I painted my GPW DOD 12/14/1943 with Non Specular Blue Gray, a color usually used in Navy aircrafts till mid 1943.
And put the marks of VPB-107, a bomber squadron based in Parmamirim Field, near Natal northeast of Brasil, from 1942 till 1945.

By reading posts, a 1943 GPW would not have left factory painted Navy color scheme. Since that is the case would the Port Agency shipping info be stenciled/painted on the side, or would it have been painted over? Also, would any data plates appear other than the standard glovebox ones?

It is correct, as far I know, no GPW left the factories in other color than Olive Drab.
The other colors was field painting, my jeep follow this, painted in a Navy Air Station.
