Quick question please.
We have a 1943 GPW with a CJ engine with a ‘supersonic’ head.
Would a replacement original GPW head fit the existing engine?

Yes. I had the exact same thing in my '42 MB. Just swapped heads and off I went!

It will work.
Only thing is that you won't be "supersonic" anymore and have to potter along at low subsonic speeds like the rest of us...

Child's play. Any 14 year old girl can do it, after she studies her engine TM for a week and gets all the tools and parts needed first. And a torque wrench. Get TM 9-1803A and study it.
You really need some skills to own these old vehicles. Either that, or pay the $100 per hour to have it done. I do have friends in the latter category; they refuse to learn. But this is your big chance. Hopefully someone near you can teach you.
